When I was younger and still ate ice cream, I used to go to the local ice cream stand and get a dipped soft serve. “Dipped” is when they dip the ice cream into a sauce, and it forms a hard shell over the cold ice cream. I never cared for the ice cream too much, but always picked off and ate the shell first. I haven’t had magic shell in years so you can only imagine how excited I was to learn that coconut butter, when served with something cold, has the same effect.
1/2 cup all bran cereal
1/2 corn flakes
Sprinkle of oats
1 tbs TJ’s peanut flour
1 tbs coconut butter
3/4 cup of rice milk
I only measured this out for the purpose of this post. I just estimate in the morning.
The peanut flour mixes in with the milk and creates a sweet peanuty flavor. It is insane.
Measure out coconut butter.
Transfer into small glass jar
Heat in boiling water until the consistency is liquid.
Pour over cereal (yes the rice milk is already mixed in. I like my cereal cold but not soggy. Most of the milk gets absorbed)
Then put in fridge for a minute or two. This will give the coconut butter time to set up.
When you put coconut butter on something cold, it turns into a “magic shell”.
Is it bad that I am this obsessed with breakfast?
Don’t answer that.

Today after I took the SAT’s (again), I stopped by my local health food store, As a Matter of Health. It’s the closest thing we have to a whole foods in my area.
Larabars and Kind Bars (my new favorite bar) were on sale for 99 cents. I couldn’t resist grabbing a few.
